cupcake wars

in an excuse to do some baking, i brought cupcakes to work for my birthday. i just love trying new recipes and allowing my coworkers to be guinea pigs of sorts. this time, i pulled out some cookbooks instead of going straight to google. i think i'll be doing this more often. it just felt more... real. i gave my best shot at a vanilla and chocolate cupcake in hopes that my pigs would try both and provide feedback on what was best. anyone else love cupcake wars on the food network? i would be lying if i didn't mention that i set a timer and tried to make the three-perfect-cupcakes-in-thirty-minutes limit. how do they do it? srsly. convection oven and years of experience? i digress. for the icing i made traditional vanilla buttercream and peanut butter. at the end of the day, twenty-one of the twenty-four cakes were gone. my department has fourteen people. two of which were out. most of which are physical therapists [health nuts]. i'll definitely be making these again.
vanilla cupcake
one package vanilla cake mix
one cup buttermilk
one third cup vegetable oil
four large eggs
preheat the oven to 350 degrees. line muffin cups with paper liners. following the box's baking instructions, combine all the ingredients in a large bowl. beat with an electric mixer until moistened, about 30 seconds. increase the speed to high and beat until thick, about two minutes longer. spoon into paper liners. bake until golden, twenty to twenty-five minutes. allow to cool.
vanilla buttercream
three sticks unsalted butter, softened
one container marshmallow fluff
half cup confectioners' sugar
one teaspoon vanilla extract
beat butter in large mixing bowl until light and fluffy. add the marshmallow fluff and beat until smooth. add the confectioners' sugar and vanilla. add up to one cup confectioners' sugar to taste.

one box devil's food cake mix

peanut butter icing

beat butter in large mixing bowl until light and fluffy. add the marshmallow fluff and beat until smooth. add the confectioners' sugar and vanilla. add peanut butter. add up to one cup peanut butter to taste.
