a colleague at work is about to pop. so, we are showering her with gifts. and food.
her favorite type of cupcake in the whole wide world is funfetti. and wouldn't you know it, i've been dying to making funfetti cakes from scratch. sign. me. up.
here's what happened.
homemade funfetti cupcakes
one and one fourth cups all purpose flour
one and one half teaspoon baking powder
one fourth teaspoon salt
three fourths cut sugar
six tablespoons unsalted butter at room temperature
one large egg + one egg white at room temperature
one teaspoon vanilla extract
half cup whole milk
two tablespoons rainbow sprinkles [jimmies]
preheat oven to 350 degrees and line muffin tin with paper liners. in a large bowl, sift together flour, baking powder and salt. in another bowl, beat the sugar and butter together until light and fluffy. add egg and egg white, one at a time, beating on low until well combined. add vanilla. add milk. with mixer on low, gradually add the flour mixture until just combined.
fold in rainbow sprinkles.
fill cupcake liners about two thirds full and bake for 15-17 minutes.
remove from pan and cool completely before frosting.

my taste tester.
verdict: just as good as store bought. i really find no difference in the taste, texture or appearance. and as per usual, it was just as easy as going to the market and paying for a pre-mix. i literally had everything already in my pantry. and i bet you do too. i'm sold.
