banana bread

what does it mean when all you have in the fruit bowl is two ripe rotting bananas?
it is time to go to the supermarket.
and banana bread is in your near future.
 my darling. isn't she a beauty?

classic banana bread via cooking light
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas
1/3 cup low-fat yogurt
1 teaspoon vanilla extract

preheat oven to 350 degrees. combine flour, baking soda and salt with a whisk. place sugar and butter in a large bowl, and beat with a mixer a medium speed until well blended. add the eggs one at a time, beating well after each addition. add banana, yogurt and vanilla; beat until blended. add flour mixture. beat at low speed just until moist. spoon batter into a loaf pan coated with cooking spray. bake at 350 degrees for one hour. cool ten minutes in pan on a wire rack; remove from pan. cool completely on wire rack. dig in!
