happy april! i hope that your fools day was filled with fibs and fun. i started to write a post about how i was going to quit the blog, that i just couldn't handle it anymore... but, i have never been able to trick with a straight face. er, typeface. april is occupational therapy month so last night i attempted scratch made strawberry cupcakes to share at work. photos above. the display had a "happy ot month" banner, a frame with the message "take an occupational therapy fortune" and my grandma's vintage, glass strawberry container filled with inspiring/motivating quotes. i was happy with how it all turned out. the cupcakes weren't too bad either. i would have liked them a bit more moist, but you can't have it all. here is the recipe.
cupcakes:
three tablespoons buttermilk
six tablespoons mashed strawberries
three eighths teaspoons of baking soda
one whole egg + yolk of one egg
nine tablespoons of butter, melted and cooled
one and a half teaspoons of vanilla
one and a half cups of flour
one cup of sugar
one fourth teaspoon of salt
seven drops of red food coloring [optional, but it will turn a weird beige color without it]
preheat oven to 350 degrees.
whisk buttermilk, strawberries and baking soda. add egg and yolk, vanilla and butter. whisk and combine.
in large bowl, stir flour, sugar and salt. add wet mixture until blended. stir in food coloring.
bake 20-25 minutes.
frosting:
eight ounces of cream cheese at room temperature
one stick of butter at room temperature
one tablespoon of vanilla
three to four cups of powdered sugar
cream butter and cream cheese. add vanilla. add powdered sugar.
makes one dozen cupcakes. i doubled and it made twenty. recipe found here.
